People always say “I don’t want to see how the sausage is made, I just want to eat it…” Well….I wanna see how it’s made and I GET TO SEE IT MADE all the time at Greco & Son’s in Bartlett Illinois! They produce the world’s best and ship more than 19 million……yes….19 Millions Lbs every year out of their Chicago facility. So today, we grabbed a few pounds… and me, Captain Demo , am taking you on a spicy and savory tour of Italy with a dish that’s sure to impress:
Spicy Truffled Calabrian Chili Sausage and Peppers with Rapini. We’re blending the robust flavors of Italy with a truffle-infused kick that only Captain Demo’s Big Truffle Sauce can provide. This dish is a vibrant celebration of high-quality ingredients and bold flavors, perfect for gathering friends and family around the table.
Ingredients:
- 2-3 lbs high-quality mild or hot Italian sausage (We HIGHLY recommend Greco and Son’s Italian sausage for the best results)
- 1 tablespoon good olive oil
- 2 large white or Spanish onions, sliced (Red onions are also great!)
- 1 red bell pepper, sliced
- 1 yellow or orange bell pepper, sliced
- 5 cloves garlic, chopped
- Salt and freshly cracked black pepper to taste
- 1 teaspoon dried oregano
- 4 tablespoons Captain Demo’s Big Truffle Sauce
- 1/2 stick cold unsalted butter
- 1/2 cup good white wine
- 1 bunch rapini (broccoli rabe), trimmed and blanched
Directions:
Prepare the Ingredients
- Heat a heavy-bottom skillet or Dutch oven over medium-high heat and add the olive oil.
- Add the Italian sausages to the pan and cook until well-browned on all sides. Once browned, remove the sausages temporarily and set aside.
Cook the Vegetables
- In the same pan, add the sliced onions and bell peppers. Cook until they start to soften and caramelize.
ee2. Add the chopped garlic, salt, pepper, and dried oregano. Continue to cook until everything is beautifully caramelized and fragrant.
- Deglaze the pan with the white wine, scraping up any bits that have stuck to the bottom. Let the wine reduce slightly.
Combine and Finish
- Lower the heat and add the Captain Demo’s Big Truffle Sauce and cold unsalted butter to the pan, stirring until the butter is melted and the sauce is creamy.
- Return the sausages to the pan, along with the blanched rapini. Toss everything together to coat in the sauce and heat through.
To Serve:
Arrange the sausage and peppers on a serving platter, making sure to spoon plenty of the rich, truffle-infused sauce over the top. Serve with crusty Italian bread to sop up all the delicious flavors and a glass of great red wine to complement the meal.
