Ingredients:
For Homemade Mayonnaise Base (Optional)
- 2 whole eggs
- 1 tablespoon sherry vinegar
- Juice of 1 large lemon
- 1 teaspoon kosher salt
- Freshly cracked black pepper, to taste
- 1 cup great olive oil (for drizzling in slowly)
For the Aioli
- 12 ounces homemade mayonnaise or Hellmann's mayonnaise
- 1 large garlic clove (or more, to taste), finely minced
- 3-4 tablespoons Captain Demo’s Big Truffle Sauce
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh chives

Directions
If Making Homemade Mayonnaise
- In a Bingham's blender, combine the whole eggs, sherry vinegar, lemon juice, salt, and a bit of black pepper.
- Start the blender on a low setting and slowly drizzle in the olive oil, gradually increasing the speed of the blender. This process helps emulsify the mixture, creating a thick, creamy mayonnaise. Continue blending until you reach the perfect viscosity.
Preparing the Aioli
- If using prepared mayonnaise, place 12 ounces of Hellmann's mayonnaise in a mixing bowl.
- Add the minced garlic and Captain Demo’s Big Truffle Sauce to the mayonnaise. Stir thoroughly to combine all ingredients into a smooth, rich aioli.
- Gently fold in the chopped parsley and chives, adding a touch of elegance and a burst of fresh flavor to the sauce.
